2 pounds skinless/boneless chicken thighs2 tablespoons Canola Oil2 tablespoons butter3 tablespoons all-purpose flour½ cup green bell pepper, diced½ cup yellow onion, diced½ cup celery, diced2 tablespoons garlic, minced1 teaspoon dried thyme1 bay leaf1 tablespoon Creole seasoning (I use 1 teaspoon to control the spice/heat)Salt & Pepper to taste3 tablespoons fresh parsley, chopped1 tablespoon Worcestershire Sauce1 (14.5) oz can diced tomatoes3-4 cups Chicken Broth2 green onions, chopped1 teaspoon hot sauce (optional)
